Aratikaya Pulusu is a classic Andhra curry made with raw banana pieces simmered in a tangy tamarind gravy. The bananas cook directly in the sauce, soaking up all the sour and spicy flavors. A simple, homely dish that pairs beautifully with rice.
Ingredients
- Raw bananas – 2 (medium-sized, peeled & chopped)
- Tamarind – small lemon-sized ball (soaked in warm water)
- Onion – 1 (finely chopped)
- Green chillies – 2 (slit)
- Coriander powder – 1 tsp
- Cumin powder – ½ tsp
- Fenugreek powder – a pinch (optional)
- Red chilli powder – 1 tsp
- Turmeric powder – ¼ tsp
- Jaggery – 1 tsp (optional)
- Salt – to taste
- Water – 1 ½ cups
- Oil – 2 tbsp
Preparation Process
- Prepare Tamarind Extract
Soak tamarind in warm water and squeeze thick pulp. Keep aside. - Sauté the Base
Heat oil in a pan. Add onions and green chillies. Sauté until onions turn soft and slightly golden. - Add Spices
Add coriander powder, cumin powder, fenugreek powder, turmeric, and red chilli powder. Mix and sauté for a minute. - Add Raw Bananas
Add the chopped raw banana pieces and mix well so they’re coated with the spices. Sauté for 2–3 minutes. - Simmer with Tamarind
Pour in tamarind extract, salt, and water. Mix well, cover, and cook on medium flame for 10–15 minutes until bananas are soft and the gravy thickens. - Finish
Add jaggery (optional) and cook for another 2 minutes. - Serve
Serve hot with steamed rice and papad for a simple Andhra-style meal.
