About Beans

French beans, also known as green beans, are long, slender vegetables with a smooth, velvety skin. They have a slightly sweet taste and a natural crunch, which makes them enjoyable to eat in a variety of dishes. These tender, edible young pods from the legume family are commonly used in Indian and Asian cuisines, especially in stir-fries, curries, poriyals, and pulao. Ingredients

  • Beans – 250 g (finely chopped)
  • Oil – 1½ tbsp
  • Mustard seeds – ½ tsp
  • Cumin seeds – ½ tsp
  • Chana dal – 1 tsp
  • Urad dal – 1 tsp
  • Dry red chillies – 2 (broken)
  • Garlic – 4 cloves (crushed)
  • Curry leaves – few
  • Turmeric powder – ¼ tsp
  • Red chilli powder – 1 tsp
  • Salt – as needed
  • Grated coconut – 2 tbsp (optional)

Preparation Process

1. Prepare the beans

Wash the beans thoroughly under running water to remove any dirt. Trim both ends and finely chop them into small pieces. Finely chopped beans cook faster and absorb the spices better.

2. Heat the oil

Place a thick-bottomed pan or kadai on medium flame. Add 1½ tablespoons of oil and allow it to heat.

3. Add tempering ingredients

Once the oil is hot, add mustard seeds and allow them to splutter. Then add chana dal and urad dal. Fry them until they turn light golden and aromatic.

Next, add cumin seeds and let them crackle.

4. Add aromatics

Add broken dry red chillies, crushed garlic, and curry leaves. Saute for about 30 seconds until the garlic releases its aroma. This step enhances the flavor of the beans fry.

5. Add beans and spices

Add the finely chopped beans to the pan. Sprinkle turmeric powder and salt. Mix everything well so the beans get coated with the tempering and spices.

6. Cook the beans

Cover the pan with a lid and cook on medium flame. Stir occasionally to prevent sticking and to ensure even cooking. The beans will slowly soften and cook in their own moisture.

If the beans appear dry, sprinkle a small amount of water and continue cooking.

7. Add chilli powder

Once the beans become soft and tender, add red chilli powder and mix well. Fry the mixture for another 2–3 minutes so the spices blend perfectly.

8. Add coconut (optional)

Finally, add grated coconut and mix gently. Cook for another minute and switch off the flame.
