Carrot Milk Curry is a classic Andhra-style milk-based curry made with tender carrot pieces simmered gently in milk. The natural sweetness of carrots blends beautifully with the creamy texture of milk, creating a light, comforting, and flavourful dish. This curry is ideal for kids and elders because it is mild, non-spicy, and easy to digest. It is a perfect everyday side dish that goes well with steamed rice, chapati, or even simple pulao. With minimal spices and simple ingredients, this recipe highlights the freshness of carrots and the richness of milk while giving a traditional homemade taste.

Ingredients

  • Carrots – 3 medium (peeled, sliced or cubed)
  • Oil – 2 tbsp
  • Onion – 1 medium (finely chopped) (optional)
  • Green chillies – 2–3 (slit)
  • Curry leaves – few
  • Ginger-garlic paste – 1 tsp
  • Turmeric powder – ¼ tsp
  • Red chilli powder – ½ tsp
  • Garam masala – ¼ tsp
  • Salt – to taste
  • Milk – ½ to ¾ cup (boiled & cooled)
  • Coriander leaves – for garnish

Preparation 

  • Heat oil in a pan.
  • Add onions, green chillies, and curry leaves; saute until onions turn soft.
  • Add ginger-garlic paste and fry for a minute.
  • Add turmeric, red chilli powder, and chopped carrots; mix well.
  • Sprinkle a little water, cover, and cook until carrots become soft.
  • Reduce flame completely.
  • Add milk slowly while stirring and add garam masala.
  • Cook on low flame for 2–3 minutes until the curry becomes slightly thick.
  • Add salt, mix, and garnish with coriander leaves.
