Ingredients

For Outer Dough:

• Maida (all-purpose flour) – 1 cup
• Salt – ½ tsp
• Ajwain – ¼ tsp (optional, for flavor)
• Oil – 2 tbsp (for moyan)
• Water – as needed (to knead stiff dough)

For Corn Cheese Filling:

• Sweet corn kernels – 1 cup (boiled and drained)
• Mozzarella or processed cheese – ¾ cup (grated)
• Green chili – 1 (finely chopped, optional)
• Black pepper powder – ½ tsp
• Red chili flakes – ½ tsp
• Oregano or mixed herbs – ½ tsp
• Salt – as needed
• Corn flour – 1 tsp (optional, for binding)
• Capsicum – 2 tbsp (finely chopped, optional for crunch)

For Frying:

• Oil – enough for deep frying

Preparation Method

Step 1: Preparing the Dough

In a mixing bowl, add maida, salt, and ajwain. Mix well. Add oil and rub it into the flour using your fingers until the mixture turns crumbly. This step is important as it helps create a crispy texture. Slowly add water and knead into a stiff and smooth dough. Do not make it soft. Cover with a damp cloth and let it rest for at least 20 minutes.

Step 2: Preparing the Filling

Lightly crush the boiled sweet corn using a blender or masher. Do not make it a paste; keep some texture for better taste. Transfer it to a mixing bowl. Add grated cheese, green chili, pepper powder, chili flakes, oregano, salt, and capsicum if using. Mix everything well. If the mixture feels slightly watery, add corn flour to bind it properly. Keep the filling aside.

Step 3: Shaping the Samosa

Divide the dough into equal small balls. Roll each ball into an oval shape, neither too thick nor too thin. Cut the rolled dough into two halves. Take one half and apply a little water along the straight edge. Fold it into a cone shape and press gently to seal.

Fill the cone with 1–2 tablespoons of the corn-cheese mixture. Do not overfill, as cheese may leak during frying. Apply water along the open edge and seal tightly. Repeat the same process for all samosas.

Step 4: Frying the Samosas

Heat oil in a deep pan on medium-low flame. Once the oil is moderately hot, gently slide in the samosas. Fry on low to medium heat. Slow frying ensures a crispy and evenly cooked outer layer.

Fry until golden brown and crisp on all sides. Remove and place them on kitchen tissue to absorb excess oil. Serve hot with green chutney or tomato ketchup.

Baking or Air Fryer Option

For a healthier version, preheat oven to 180°C. Brush samosas lightly with oil and bake for 20–25 minutes until golden. In an air fryer, cook at 180°C for 12–15 minutes, flipping halfway.
