Kodiguddu Iguru is a traditional Andhra-style semi-dry egg curry made by frying boiled eggs and simmering them in a spicy onion-based masala. It’s simple, quick, and pairs perfectly with rice or roti.
Ingredients
- Boiled eggs – 5
- Oil – 3 tbsp
- Onion – 2 (made into paste)
- Green chillies – 3 (slit)
- Ginger garlic paste – 1 tsp
- Red chilli powder – 1 tsp
- Turmeric powder – ¼ tsp
- Salt – to taste
- Coriander powder – 1 tsp
- Cumin powder – ½ tsp
- Garam masala – ½ tsp
- Water – little (for gravy)
- Fresh coriander leaves – few (for garnish)
Preparation
- Heat 1 tbsp oil in a pan.
- Add boiled eggs, sprinkle a little turmeric and salt, fry until golden. Remove and keep aside.
- In the same pan, add 2 tbsp oil.
- Add onion paste and green chillies; fry until raw smell goes off and turns golden.
- Add ginger garlic paste and saute until aromatic.
- Add red chilli powder, turmeric, coriander powder, cumin powder, garam masala, and salt. Mix well.
- Add little water and cook until the masala thickens and oil separates.
- Add fried eggs, mix gently, and cook for 3–4 minutes on low flame so that masala coats the eggs.
- Garnish with coriander leaves and serve hot.
Tips
- Prick eggs lightly before frying for better flavor absorption.
- You can add a spoon of tomato puree for a slight tang.
- Use freshly ground spices for enhanced aroma.
