Fried rice is a quick Indo-Chinese dish made with cooked rice, vegetables, sauces, and aromatic garlic. It is perfect for using leftover rice and can be customized with egg, chicken, or paneer.
Ingredients
- Cooked rice – 2 cups (cooled, preferably leftover)
- Oil – 2 tbsp
- Garlic – 1 tbsp (finely chopped)
- Spring onions – 2 tbsp (chopped)
- Onion – 1 small (optional)
- Carrot – 2 tbsp (finely chopped)
- Beans – 2 tbsp (finely chopped)
- Capsicum – 2 tbsp (finely chopped)
- Cabbage – ¼ cup (optional)
- Soy sauce – 1 tbsp
- Vinegar – 1 tsp
- Green chilli sauce – 1 tsp (optional)
- Black pepper – ½ tsp
- Salt – as needed
Preparation Method
- Heat oil in a wide pan or wok on high flame.
- Add chopped garlic and saute for a few seconds until aromatic.
- Add onions and spring onions; saute till slightly soft.
- Add all chopped vegetables and stir-fry on high flame for 2–3 minutes (veggies should remain crunchy).
- Add cooked rice and mix gently.
- Add soy sauce, vinegar, green chilli sauce, pepper, and salt.
- Toss everything well on high flame for 1–2 minutes.
- Switch off the flame and garnish with spring onion greens.
Variations
- Egg Fried Rice: Scramble 2 eggs in the pan before adding vegetables.
- Chicken Fried Rice: Add cooked shredded chicken after vegetables.
- Paneer Fried Rice: Add sautéed paneer cubes for a vegetarian protein boost.
- Schezuan Fried Rice: Add 1 tbsp schezuan sauce for spicy flavor.
