Fried Rice Recipe (Restaurant Style Vegetable Fried Rice)

Fried rice is a quick Indo-Chinese dish made with cooked rice, vegetables, sauces, and aromatic garlic. It is perfect for using leftover rice and can be customized with egg, chicken, or paneer.

Ingredients

  • Cooked rice – 2 cups (cooled, preferably leftover)
  • Oil – 2 tbsp
  • Garlic – 1 tbsp (finely chopped)
  • Spring onions – 2 tbsp (chopped)
  • Onion – 1 small (optional)
  • Carrot – 2 tbsp (finely chopped)
  • Beans – 2 tbsp (finely chopped)
  • Capsicum – 2 tbsp (finely chopped)
  • Cabbage – ¼ cup (optional)
  • Soy sauce – 1 tbsp
  • Vinegar – 1 tsp
  • Green chilli sauce – 1 tsp (optional)
  • Black pepper – ½ tsp
  • Salt – as needed

Preparation Method

  1. Heat oil in a wide pan or wok on high flame.
  2. Add chopped garlic and saute for a few seconds until aromatic.
  3. Add onions and spring onions; saute till slightly soft.
  4. Add all chopped vegetables and stir-fry on high flame for 2–3 minutes (veggies should remain crunchy).
  5. Add cooked rice and mix gently.
  6. Add soy sauce, vinegar, green chilli sauce, pepper, and salt.
  7. Toss everything well on high flame for 1–2 minutes.
  8. Switch off the flame and garnish with spring onion greens.

Variations

  • Egg Fried Rice: Scramble 2 eggs in the pan before adding vegetables.
  • Chicken Fried Rice: Add cooked shredded chicken after vegetables.
  • Paneer Fried Rice: Add sautéed paneer cubes for a vegetarian protein boost.
  • Schezuan Fried Rice: Add 1 tbsp schezuan sauce for spicy flavor.
