This gingerbread cake is a soft, moist, and aromatic dessert made with egg, brown sugar, and warm spices like ginger, cinnamon, and cloves. Perfect for tea time, celebrations, or festive occasions, it combines traditional flavors with an easy-to-follow method, making it ideal for home baking.

Ingredients

  • Maida (all-purpose flour) – 1½ cups
  • Brown sugar – ¾ cup
  • Oil or melted butter – ½ cup
  • Milk – ½ cup
  • Egg – 1 large (room temperature)
  • Ginger powder – 1½ tsp
  • Cinnamon powder – 1 tsp
  • Clove powder – ¼ tsp
  • Nutmeg powder – ¼ tsp (optional)
  • Baking powder – 1 tsp
  • Baking soda – ½ tsp
  • Salt – a pinch
  • Vanilla essence – 1 tsp
  • Vinegar or lemon juice – 1 tbsp

Preparation Method

  1. Preheat oven to 180°C. Grease and line a cake tin.
  2. Sieve maida, baking powder, baking soda, salt, and all spice powders together.
  3. In a bowl, whisk egg and sugar until slightly fluffy.
  4. Add oil/butter, milk, and vanilla. Mix well.
  5. Add dry ingredients gradually and fold gently.
  6. Add vinegar/lemon juice and mix once.
  7. Pour batter into the tin.
  8. Bake for 30–35 minutes or until a toothpick comes out clean.
  9. Cool, slice, and serve.

Tips

  • Use brown sugar for classic gingerbread taste.
  • Do not overbeat after adding flour.
  • Rest cake for 10 minutes before slicing for better texture.
