- Curry leaves – few
- Onions – 2 (finely chopped)
- Green chillies – 2 (slit)
- Tomatoes – 2 (finely chopped)
- Turmeric powder – ¼ tsp
- Red chilli powder – 1½ tsp
- Coriander powder – 1½ tsp
- Cumin powder – ½ tsp
- Tamarind – small lemon-sized ball (soaked in warm water and extracted)
- Water – 2 cups (adjust for consistency)
- Salt – to taste
- Fresh coriander leaves – for garnish
Preparation Steps
- Boil the Eggs:
Boil eggs in salted water for 10 minutes. Cool, peel, and make small slits on them. Set aside. - Prepare the Base:
Heat oil in a pan. Add curry leaves, chopped onions, and green chillies. Sauté until onions turn golden brown. - Add Tomatoes and Spices:
Add chopped tomatoes, turmeric, red chilli powder, coriander powder, and cumin powder. Cook until the tomatoes turn mushy and oil separates. - Add Tamarind Extract:
Add tamarind pulp, salt, and 2 cups of water. Mix well and bring to a boil. - Add Eggs:
Gently drop the boiled eggs into the gravy. Simmer for 10–12 minutes until the pulusu thickens slightly. - Garnish:
Sprinkle chopped coriander leaves and switch off the flame.
