Lemon curd is a rich, tangy, and creamy spread made from fresh lemon juice, sugar, eggs, and butter. It has a smooth, custard-like texture and a bright citrus flavor. Commonly used as a filling for tarts, cakes, or as a spread on toast and scones, lemon curd adds a zesty punch to desserts and breakfasts alike. It’s easy to make at home and stores well in the fridge.

Ingredients:

  • 2 large eggs
  • 2 egg yolks
  • 1/2 cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest
  • 1/2 cup sugar
  • 1/4 cup unsalted butter (cut into small pieces)

Instructions:

  1. In a saucepan, whisk together eggs, yolks, sugar, lemon juice, and zest.
  2. Cook on low heat, stirring constantly, until the mixture thickens (about 7–10 mins).
  3. Remove from heat and stir in butter until melted and smooth.
  4. Strain through a sieve to remove zest for a silky texture.
  5. Let it cool and store in a clean jar. Refrigerate up to 2 weeks.
