Munagaku Fry (Drumstick Leaves / Moringa) is a traditional Andhra-style side dish made with fresh drumstick leaves, garlic, red chillies, and tempering spices. It’s simple, healthy, and goes perfectly with hot rice and ghee. Drumstick leaves are a powerhouse of nutrients, making this dish both delicious and wholesome.

Ingredients

  • Munagaku (Drumstick leaves) – 2 cups (cleaned)
  • Oil – 1 tbsp
  • Mustard seeds – ½ tsp
  • Cumin seeds – ½ tsp
  • Minapappu (Urad dal) – 1 tsp
  • Chana dal – 1 tsp
  • Garlic – 5–6 cloves (crushed)
  • Dry red chillies – 2 (broken)
  • Curry leaves – few
  • Turmeric – ¼ tsp
  • Salt – to taste

Preparation

  1. Separate drumstick leaves (Moringa) from stems, wash, and keep aside.
  2. Heat oil in a pan. Add mustard seeds and cumin seeds.
  3. Once they splutter, add urad dal and chana dal. Fry till golden.
  4. Add crushed garlic, dry red chillies, and curry leaves. Saute for a few seconds.
  5. Add turmeric and salt.
  6. Add drumstick leaves and stir well.
  7. Cover and cook on low flame for 5–7 minutes until leaves turn soft.
  8. Serve hot with rice and ghee.
