Munagaku Podi is a traditional Andhra-style spice powder made with roasted drumstick leaves, dals, and spices. It is aromatic, nutritious, and tastes best when mixed with hot rice and ghee.

Drumstick leaves, also known as moringa or munagaku, are a powerhouse of nutrition offering multiple health benefits. Rich in vitamins A, C, and B-complex, along with essential minerals like calcium, iron, and magnesium, they help boost immunity, improve bone health, and support energy metabolism. Ingredients

  • Munagaku (Drumstick leaves) – 1 cup
  • Dry red chillies – 5 to 6 (adjust to taste)
  • Urad dal – 2 tbsp
  • Chana dal – 1 tbsp
  • Cumin seeds – 1 tsp
  • Coriander seeds – 1½ tsp
  • Tamarind – small marble-sized piece
  • Garlic – 3 to 4 pods (optional)
  • Salt – to taste
  • Oil – 1 tsp

Preparation Steps

  1. Clean and dry leaves:
    • Remove drumstick leaves from the stalks.
    • Wash well and spread on a cloth to dry completely (or lightly dry roast to remove moisture).
  2. Dry roast the leaves:
    • Heat a pan and dry roast the munagaku on low flame till crisp.
    • Remove and keep aside.
  3. Roast the spices:
    • Add 1 tsp oil to the same pan.
    • Fry urad dal and chana dal till golden.
    • Add cumin, coriander seeds, and red chillies. Roast till fragrant.
    • Turn off the heat and add tamarind and garlic. Let them heat in residual heat.
  4. Cool and grind:
    • Let everything cool completely.
    • First grind the dals, spices, and salt into a coarse powder.
    • Then add the roasted munagaku and grind again to desired texture.
  5. Store:
    • Store in an airtight container. Stays fresh for 2–3 weeks at room temperature.
