Nuvvula Patti (Sesame Brittle / Til Chikki / Achu) is a crunchy and nutritious sweet made with roasted sesame seeds and jaggery. Rich in calcium, iron, and healthy fats, it is perfect for Sankranti and winter seasons.
Ingredients
- White sesame seeds – 1 cup
- Grated jaggery – ¾ cup
- Ghee – 1 tsp
- Water – 2 tbsp
- Cardamom powder – ¼ tsp (optional)
Preparation Process
- Dry roast sesame seeds on medium flame until aromatic. Keep aside.
- Add jaggery and water in a pan and melt completely.
- Filter the syrup and pour back into the pan.
- Boil until brittle stage (drop in cold water—it should turn hard and break).
- Switch off the stove.
- Add ghee, cardamom powder (optional), and roasted sesame seeds; mix quickly.
- Pour onto a greased plate or rolling board.
- Roll evenly with a greased rolling pin.
- Cut into squares while still warm.
- Cool fully and store in an airtight container.
Tips
- Roast sesame seeds on low heat only; over-roasting makes them bitter.
- Jaggery must reach hard-crack stage — when dropped into water, it forms a hard piece that breaks with a snap.
- Once jaggery syrup is ready, work quickly because it hardens fast.
- Grease rolling pin and plate with ghee to prevent sticking.
- Cut while the mixture is still warm; once fully cooled it becomes brittle.
- For extra flavor, add a pinch of cardamom powder.
