Putharekulu, popularly known as Paper Sweet, is a traditional Andhra Pradesh delicacy made from ultra-thin rice starch sheets filled with jaggery, ghee, and dry fruits. This sweet is especially famous in Atreyapuram and is commonly prepared during festivals, weddings, and special occasions.

Ingredients

For Putharekulu Sheets

  • Rice – 1 cup
  • Water – as needed

For Filling

  • Jaggery – 1 cup (grated)
  • Ghee – ½ cup
  • Cashews – 2 tbsp (chopped)
  • Almonds – 2 tbsp (chopped)
  • Cardamom powder – ½ tsp

Preparation

Step 1: Rice Starch Batter

  • Soak rice for 6–8 hours.
  • Grind with enough water to a smooth batter.
  • Strain the batter using a thin cloth.
  • Collect the starch water and let it rest for 3–4 hours.
  • Discard the clear water on top and use the thick starch at the bottom.

Step 2: Prepare Putharekulu Sheets

  • Heat an inverted iron tawa or non-stick pan on low flame.
  • Lightly wipe the surface with a wet cloth.
  • Dip a clean cotton cloth in starch, squeeze lightly, and gently wipe over the hot tawa.
  • A very thin transparent sheet will form instantly.
  • Carefully peel it off once dry and keep aside.
  • Repeat the process for all sheets.

Step 3: Prepare Filling

  • Heat ghee in a pan.
  • Add chopped cashews and almonds, fry lightly.
  • Add grated jaggery and stir until it melts.
  • Add cardamom powder and switch off the flame.

Step 4: Assemble Putharekulu

  • Place one sheet flat.
  • Brush lightly with ghee.
  • Add a spoon of jaggery filling.
  • Fold gently into a roll or square shape.
  • Repeat for all sheets.

Tips

  • Always keep the flame on low while making sheets.
  • Sheets should be paper-thin and completely dry.
  • Handle the sheets carefully as they tear easily.
  • Fresh homemade ghee gives the best flavor.

Variations

  • Sugar can be used instead of jaggery.
  • Dry coconut powder can be added to the filling.
  • Roasted sesame powder can also be mixed for flavor.
