Preparation Process

Step 1: Prepare Rice Starch Batter

  1. Wash the rice thoroughly and soak it in water for 6–8 hours.
  2. Drain the water and grind the soaked rice with enough water to make a smooth batter.
  3. Strain the batter using a thin cloth into a bowl.
  4. The liquid collected is rice starch water.
  5. Let this starch water rest for 3–4 hours without disturbing it.
  6. After resting, the thick starch settles at the bottom and clear water forms on top.
  7. Carefully discard the clear water and keep the thick starch paste, which will be used for making sheets.

This starch is the key ingredient that creates the thin, paper-like layers of Putharekulu.

Step 2: Prepare Putharekulu Sheets

  1. Heat an inverted iron tawa or non-stick pan on a low flame.
  2. Lightly wipe the surface with a wet cloth so the sheet forms smoothly.
  3. Dip a clean cotton cloth in the prepared rice starch and squeeze slightly.
  4. Gently wipe the cloth over the hot tawa surface.
  5. Instantly, a very thin transparent sheet will form.
  6. Allow it to dry for a few seconds.
  7. Carefully peel the sheet off and place it on a plate.
  8. Repeat the same process to prepare multiple sheets.

These sheets are extremely delicate, so handle them very gently.

Step 3: Prepare the Sweet Filling

  1. Heat ghee in a pan on low flame.
  2. Add chopped cashews and almonds.
  3. Fry lightly until they turn slightly golden.
  4. Add the grated jaggery and stir continuously.
  5. Cook until the jaggery melts completely and blends with the nuts.
  6. Add cardamom powder for fragrance.
  7. Turn off the flame and allow the mixture to cool slightly.

This filling gives Putharekulu its rich sweetness and crunchy texture.

Step 4: Assemble Putharekulu

  1. Place one prepared rice sheet flat on a plate.
  2. Lightly brush ghee over the sheet.
  3. Add one spoon of jaggery filling in the center.
  4. Fold the sheet gently into a roll or square shape.
  5. Repeat the same process for all sheets.
